Vrat wali aloo Sabzi (Simple Potato curry with out garlic or onion) is simple and delicious and is ready is minutes. This curry / sabzi is consumed mostly during the days when one observing fast and restricts from consuming garlic or onion. This “Falahari” sabzi goes well with Kuttu ke poori (Buckwheat flour puffed bread).

There are many more recipes you can try whilst you observe fast, such as Sabudana Kheer / Pudding, Sabudana Vada (Deep fried Sago patties), Buckwheat pancake / dosa, etc.

You will be surprised to see how easy is this to cook and is fuss free. This recipe shows how our ancestors used to cook with minimal ingredients and food still used to be scrumptious. I do not know the date and origin of this recipe, however based on what I heard from my grand mother, this recipe has been into existence for ages.

Instructions
  1. Mash the boiled potatoes properly. Do you not mash it like mash potatoes.
  2. Heat oil in a pan / kadhai on medium flame. Add Cumin seeds and once they crackle add chopped chillies, salt and pepper powder to it and sauté for a minute.

  3. Add boiled potatoes and mix well.

  4. Now, add 1.5 cup of water and let it cook till you get the desired consistency of gravy.
  5. Switch off the flame and add lemon juice and chopped coriander leaves.

Recipe Notes
  • You can adjust the level of spice as per your taste. As I eat salt and spices only once a day during fasts, so I feel like to eat little more spicy.
  • Using Desi ghee/clarified butter in place of oil will make your sabzi taste much more good.
  • You can adjust the amount of water depending how thin or thick you want your gravy to be.
