Baby Corn Masala

Baby corn is one such thing that can gel well with any cuisine, be it Indian, Chinese or anything from West. Baby corn has host of benefits, like it is low in calories, and has less carb when compared with normal corn. Baby corn has large fibre contents, which is good for lowering risk of heart diseases and type 2 diabetes. A 1/2-cup serving offers 4 percent of the daily value for vitamin A and iron, and 2 percent of the daily value for vitamin C. Sharing this Baby Corn Masala, a creamy gravy based recipe, which I would say is derived from my experiment with North Indian Cuisine.

Besan Ladoo Recipe – Indian Sweet

Festivals can never be complete without sweets and “Besan Ladoo” (बेसन लड्डू) has been one such sweet which has its own niche place in sweets. The roasted aroma of gram flour with ghee, tossed in coriander powder leaves a long lasting flavour in mouth. I simply love this ladoo and is mostly available in my kitchen cupboard round the year. This besan ladoo recipe is simple to follow and I have been using this for more than a decade now, so its full proof.

As much as people prefer cookies in snacks, I prefer this besan ladoo, and if its a festival like Diwali and Holi, rest assured that if you visiting me, you will be greeted by these absolutely mouth watering ladoos.

Kuttu Ka Dosa

Who says that vrat ka khana (Fasting food) is either boring or laden with Oil. “Kuttu ka dosa” or “Falahari Dosa” or “Vrat ka dosa” is a great option for those who want to avoid eating Kuttu in fried pooris (puffed indian bread) or pakoris.

These Buckwheat Crepes / Pancakes are instant and gluten-free. As the recipe doesn’t require any soaking and grinding, they require very less time and effort, and all this comes with no compromise on tastes. This recipe produces a crisp buckwheat dosa, and the filling is made of potatoes. It is a good source of protein, iron, zinc.

Handi Gosht – Lamb Stew Recipe

“Handi Ghost” (हांड़ी गोश्त) is Lamb stew or mutton stew, cooked in Handi. Handi is a deep and narrow-mouthed cooking utensil used in Indian subcontinent, normally this is an earthen pot, but can be made of metal. In an ideal set up “gosht” should be cooked in the earthen pot, that offers an absolutely unique flavour, however I have cooked it a metal “handi”, the unique shape of “handi” offers the perfect mechanism on how the heat gets distributed on to the contents while cooking. You may try this in any normal pan, but if you have handi or can get it, try in that. This is awesome non-vegetarian recipe that I have learnt from the authentic traditional cooks living in village, where cooking in “handi” is norm of life. This way you now know “how to make handi gosht” 🙂

Gemista Recipe (Greek Stuffed Tomatoes and peppers with rice)

Gemista RecipeJust few weeks ago, fortunately (thanks to my loving Husband), I got a chance to explore the most beautiful Greek island Santorini. Famous for its infrastructure, I found that island amazingly beautiful and offered some best option in terms of food.

Normally in Europe, being vegetarian I get less options of having some great vegetarian food. However, this greek island offered me some great dishes. Some of the most common dishes which one can find in every Greek restaurant are Greek salad with feta cheese, Fava and Gemista.

I tried all the three (feta cheese, fava and gemista) and liked Gemista very much. I had gemista in two different restaurants and both were superb!
