Here is the vegetarian version of Thai tom yum soup, and as you will expect, this is loaded with fresh Thai spices. The aroma of soup is so good that you can’t resist having it. As much as it is popular in Thailand, this is also a well known soup in Malaysian menu.

Types of Tom Yum soups

There are two types of tom yum soup, one is clear soup and other is frothy, milk based. Over here, I am sharing recipe of clear tom yum soup.

Ingredients


Ingredients for tom yum soup is as follows:

  • Mushroom – Soul of vegetarian version of soup
  • Onion – to give richness
  • Garlic – for flavours
  • Lemongrass – Thai food can’t be complete without it
  • Ginger – Nice hint of warmth
  • Vegetable stock – For flavour and richness
  • Water – For clear soup
  • Kaffir lime leaves – Adds to aroma and flavour
  • Thai chilli – Offers lush red color
  • Bok choy – Another gem form thai couisine
  • Tofu – Perfect for vegetarian version 
  • Cherry tomatoes – Offers tanginess and richness
  • Thai Basil leaves – Unique aroma and taste
  • Soy Sauce –  
  • Salt 
  • Red chilli sauce – For spicyness
  • Lime juice – For tanginess
  • Coriander leaves 
  • Oil – For sautéing

Method of making tom yum soup

  • Heat a wide pan over medium heat and add oil to it.
  • Once warm, add chopped garlic, onion, lemongrass and ginger julienne to it and sauté. Add sliced mushroom and sauté again.
  • Add bok choy, tofu and water and mix. Add vegetable stock and mix well. Add cherry tomatoes and chillies and let it cook till it starts boiling.
  • Add basil leaves and kaffir lime leaves. Now add soy sauce, salt, and red chilli sauce and stir it so that everything is mixed. Let it boil for few more minutes. 
  • Squeeze lime juice in it and add coriander leaves. Stir it and let it cook for 2-3 minutes. Switch off the heat.
  • Transfer it into bowls and serve this soup piping hot. Enjoy..

Tips

  1. Galangal is the main ingredient of this recipe.  I couldn’t find it in my local grocery store so I used ginger in my recipe. However if you can source galangal, please use that.
  2. Similarly if you can’t find kaffir lime leaves, you can use either Merkut lime leaves or Simply lime zest( grate the skin of lime).
  3. You can make it more spicy as per your taste buds, just increase the amount of red chilli sauce accordingly.

Jokes aside this soup is a hearty warm soup. It feels like a cozy hug on a cold night, or simply have it because you love Thai flavours and calories being so low, you can’t really go wrong with this soup.
