Teriyaki Chicken Recipe – Recently I have acquired taste for some Japanese food. I have been exploring some authentic Japanese eating joints in and around London. My partner too have developed special liking for Teriyaki sauce, and that led to this chicken teriyaki recipe.

What is chicken teriyaki
Teriyaki is a cooking technique, closely linked to Japanese cuisine (Thanks to Japanese people). In this technique, food is grilled or broiled in the soy sauce.
It comes as surprise that the the teriyaki thing does not exists in Japan. Just like chilli paneer does not exists in China. Teriyaki is more like Hawaiian / American concept. Japanese workers who had migrated to Hawaii, found local ingredients and created soy sauce and created Teriyaki flavour.
Teriyaki refers to sweet savory soy sauce based sauce called teriyaki sauce.
My partner and I were keen to try out the teriyaki food at home. It was a blessing in disguise when we bumped into “Hello Fresh”.
What is hello fresh
We were looking for try out something new on a busy week day, and Hello fresh concept appealed to us. Great concept, I say. You can subscribe to Hello Fresh meals. These meals are sent meal kits to make fresh meals at home, with very simple and easy to follow instructions.
The meals range from Vegan to non-veg, including chicken, fish, beef, as well as gluten free too. The recipes are from various part of world too, so one can choose which cuisine appeals to ones taste buds. The difficulty level of making meals varies. It ranges from simple and quick meals to make meals to one which requires little expertise to challenge yourself.
The recipe I am sharing here is one which I have taken inspiration from Hello Fresh.
How to make teriyaki sauce
Mix garlic, honey, soy sauce and ginger together and top up with little water.
How to make best Teriyaki Chicken
- Boil 600ml of water and add rice, salt and coconut powder to it. This will prepare your rice, keeping an eye to the rice to not over cook. Whilst rice is boiling, get going with Teriyaki Chicken preparation.
- Clean the Bok Choy by removing the root and separating the leaves. Cut Chicken into small pieces, and saute cashews for few mins in a non stick pan.
- Add little oil in the pan and stir fry Chicken, not to over cook or keep it raw.
- Once chicken looks close to be being cooked, add teriyaki sauce and let it cook for 2 mins.
- Add Boy Choi/ Choy to the pan. Let it cook for couple of mins.

- Is not gluten-free. You can be made it gluten-free by using gluten-free soy sauce
Pro tips
- Exercise care while shallow frying cashews. You do not want to burn cashews but get a nice crunchy taste. Keep heat at low to medium level.
- The recipe for rice suggests using coconut powder too, but you may use coconut milk as alternative.
- You can make the Teriyaki sauce in advance to save time.
- Always use fresh ingredients for best taste.
- Do not over cook chicken, else chicken will be chewy.
- You can follow same recipe and make vegan equivalent using Tofu.

Serving suggestion
Serve Teriyaki Chicken on the layer of rice, topping up with those fried cashew. Remember that its best enjoyed hot.

Chicken Teriyaki
Ingredients
- 400 Grams Basmati Rice
- 400 Grams Chicken Pieces
- 3 Units Bokchoy or Pok Choi
- 3 Tablespoon Cashews
- 2 Tablespoon Coconut Powder
- 1 Clove Garlic
- 2 Tablespoon Soy souce
- 1 Tablespoon Honey
- 2 Tablespoon Ginger Grated
- 1/2 Teaspoon Salt As per taste
- 2 Tablespoon Oil I have used Olive oil
Instructions
- Boil 600ml of water and add rice, salt and coconut powder to it. This will prepare your rice, keeping an eye to the rice to not over cook. Whilst rice is boiling, get going with Teriyaki Chicken preparation.
- Clean the Bok Choy by removing the root and separating the leaves. Cut Chicken into small pieces, and saute cashews for few mins in a non stick pan. Exercise care while shallow frying cashews as you do not want to burn them but yet a nice crunchy taste, look for cashews being turned to brownish in color, keeping heat at low to medium.
- To make Teriyaki sauce, in a bowl, add honey, 2 tablespoon of soy sauce, grated ginger, crushed (or grated) garlic, and 2 tablespoon of water.
- In the same pan which you used to saute cashews (I try to avoid using unwanted new pans to avoid cleaning), add little oil and stir fry Chicken, not to over cook or keep it raw.
- Once chicken looks close to be being cooked, add Teriyaki sauce and let it cook for 2 mins.
- Now add Boy Choi/ Choy to the pan and gently let it cook for couple of mins to ensure Bok Choy leaves are wilted.
- Now serve this Teriyaki Chicken on the layer of rice, topping up with those fried cashew. Remember that its best enjoyed hot.
Notes
- You can use air fried cashews instead of frying in oil.
- Many people get confused between Bok Choy and Pak Choy, they are pretty much the same.
- The amount of soy sauce used for Teriyaki can be increased if you feel its mild in taste.
- Here this recipe is of Chicken, but same can be used with Paneer or Tofu for a vegetarian version of Teriyaki.
- You can skip adding Coconut powder in rice if you don’t have that ready in your kitchen cupboard.
