Cheesy Mushroom Bruschetta
About 2 years ago I posted recipe for bruschetta con funghi, one of pizza express delicacies. Inspired by same, I had tried bruschetta bread with toppings of mushroom and cheese, and I made this again one of those “ready in minutes” starter. This “cheesy mushroom bruschetta” is really simple to make and you can certainly earn brownie points from your guests, as it tastes simply superb! Thanks to the crunchy crust and cheesy topping, it tastes like mine pizza.
I always keep garlic bread or baguette slice at home and prepare this starter asap as I know my daughter is hungry after school or if there is any guest at home unexpectedly, and then I dish out this easy bruschetta in few minutes. Me happy, guests happy, all in all, everyone happy 🙂
Pre-heat the oven at 180 degree temperature for 6-7 minutes. Place the Baugette / Garlic bread slices on a baking tray and bake them for 8-10 minutes.
Get your tomatoes, onion and mushrooms chopped and ready.
Meanwhile, lets prepare our topping. Heat a pan over medium heat with 2 teaspoon of oil. Add chopped mushrooms, tomatoes and onions and sauté for 5 minutes.
Now add chopped jalapenos ,salt and pepper and sauté again for a minute. Switch off the heat.
Take out the baking tray carefully and place it on a cooling rack. Now spread the onion-mushroom topping evenly on the slices. Sprinkle cheese on top of it and place the tray again in the oven for 5 minutes.
Take out the tray and serve the bruschetta hot.
In my recipe, i have used garlic bread slices but you can use any bread of your choice.
Try experimenting with other toppings of your choice, like artichokes, olives or avocado.
