How does chilli gobi taste

Chilli Gobi has medley of sweet and sour along with hint of spices. Cauliflower has crispy texture, thanks to the deep frying of the coated batter. Cauliflower is sautéed along with spring onions and capsicum pieces in combination of soy sauce, and red chilli sauce.

Step by step guide to make chilli gobi

Blanch the Cauliflower:

  • Boil water in a large, wide pan.
  • Add cauliflower florets and blanch for 5-7 minutes.
  • Drain the florets using a colander and spread them on a tray to evaporate extra moisture.

Prepare the Batter:

  • In a mixing bowl, combine 5 tablespoons of cornflour, all-purpose flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper powder.
  • Gradually add water to make a smooth batter, ensuring no lumps remain.

Coat the Cauliflower:

  • Add the cauliflower florets to the batter and coat them well.

First Frying:

  • Heat oil in a pan.
  • Fry the florets in hot oil, a few at a time, until they are light golden in color.
  • Remove the florets and place them on a kitchen towel to drain excess oil.

Second Frying:

  • Fry the florets again in hot oil until they turn a nice brown color.
  • Remove and set aside.

Prepare the Sauce:

  • In a separate pan, heat 2 tablespoons of oil over medium heat.
  • Sauté chopped garlic and grated ginger.
  • Add chopped chillies and onions, sauté for 3-4 minutes.
  • Add 3 tablespoons of spring onion greens and sauté for another 2-3 minutes.

Mix the Sauces:

  • Add soy sauce, vinegar, red chilli sauce, sugar, and the remaining salt and pepper powder.
  • Mix well and add 1/2 cup of water, letting it boil.
  • Mix 1 tablespoon of cornflour with 1/3 cup of water and add to the pan.
  • Sauté until the mixture thickens and boils for a few minutes.

Combine Cauliflower and Sauce:

  • Add the fried cauliflower florets to the sauce.
  • Mix well to coat the florets evenly.

Serve:

  • Transfer the cauliflower to a serving bowl.
  • Garnish with the remaining spring onion greens.
  • Serve hot and enjoy!

Key Notes

  1. Don’t over-boil the florets in boiling water. Boil only for 5-7 minutes as they will be properly cooked while frying. Over boiling can result in mashing of florets.
  2. For healthier version of this, you can use air-fried cauliflower.

Serving Suggestion

Serve this gobi chilli pipping hot, else cauliflower can get soggy and won’t taste great. Pair it with a chilled drink.

Ingredients
  

  • 3 cup Cauliflower Florets
  • 6 tbsp Corn Flour
  • 4 tbsp All Purpose Flour/ Maida
  • 2 Green chillies  chopped
  • 1/2 cup Spring onion bulbs Finely chopped
  • 4 tbsp Spring Onion greens Finely chopped
  • 1 tsp Salt
  • 1/2 tsp Black pepper powder
  • 1 tbsp  Ginger  Grated
  • 4 Garlic Cloves  Finely chopped
  • 2 tbsp Soy sauce
  • 2 tbsp Red chilli sauce
  • 1 tbsp White Vinegar
  • 2 tsp Brown Sugar
  • 2 tbsp Oil extra for deep frying

Instructions
 

  • Boil water in a big and wide pan and blanch the cauliflower florets for 5-7 minutes in boiling water. After that, drain out the water in a colander and spread them on a tray so that extra moisture is evaporated.
  • In a mixing bowl, add 5 tablespoon of cornflour, all purpose flour, 1/2 teaspoon salt and 1/4 teaspoon pepper powder. Mix them well with a spoon. Now with the help of water, make a smooth batter of it. Beat it nicely so that there are no lumps.
  • Add the cauliflower florets in the batter and coat them well with the batter. 
  • Heat oil in a pan and drop these florets in hot oil one by one and few at a time. Deep fry them till they are light golden in colour. Take them out and keep on a kitchen towel.
  • Once all the florets are fried, add them again to the hot oil and fry again for few minutes till they are nice brown in colour. Take them out.
  • In a separate pan, heat 2 tablespoon oil over medium heat. Add chopped garlic and grated ginger and sauté. Add chopped chillies and onions to it and sauté again for 3-4 minutes. Add 3 tablespoon of spring onion greens and sauté for 2-3 minutes.
  • Add soy sauce, vinegar, red chilli sauce, sugar and rest of salt and pepper powder. Mix them well. Add 1/2 cup of water and let it boil. Meanwhile, mix one tablespoon of cornflour to the 1/3 cup of water. Add this to the cooking sauces and sauté till all gets boiled for few minutes.
  • Add cauliflower florets now and mix everything well so that florets are nicely coated in the sauce. Switch off the heat.
  • Transfer to a serving bowl and garnish with rest of spring onion greens and serve hot.
