An excellent starter or snack would be this tandoori gobi. If you are a gobi / cauliflower lover, its definitely worth trying. Tandoori paneer and chicken are common tandoor based starters. Tandoori gobi (gobhi) is on the same line of cooking. This gobi recipe is must for a gobi lover.
What is Tandoori Gobi
Gobi (also spelled as Gobhi) is cauliflower, and cooking of this gobi in tandoor, is tandoori gobi. First take out florets of cauliflower, then marinate it in a marination of selected spices. Now, roast these florets in tandoor to cook in direct heat, this will give you tandoori gobi.

Gobi is one of the most common vegetable found anywhere in the world. I normally used to make aloo-gobi sabzi. The days when I want to pamper myself, I will lean on to make gobi manchurian. The other day, I made tandoori chicken for my family and since I do not eat non-veg food, I thought what shall I make for myself? This made me make this tandoori gobi.
In an ideal world, this gobi needs to be made in a tandoor. Having said that it is not possible for a normal household to have tandoor at home. In this recipe, I have used oven.
Method
- Mix all the ingredients, namely, yogurt, ginger garlic paste, red chilli powder, salt, turmeric powder, coriander powder, cumin powder, chaat masala, fried onion and lemon juice, except oil, together in a bowl and make a paste of it.
- Now add 1 tablespoon oil and mix well.
- Add the cauliflower florets in it the marination. Mix the florets so that they are well coated in the marination. Cover the bowl and let them marinate for 30 minutes.
- Pre heat the oven for 5-7 minutes on 180 degree temperature. Place the florets one by one on a baking tray. Spread the rest 1 tablespoon oil over them and keep the tray in oven for 20 minutes.
- Take the baked cauliflower florets out and serve hot.

Pro Tips
- You must marinate gobi / cauliflower florets for minimum of 30 mins. This will help in flavours to settle in on the gobi.
- You can plan ahead and get this marinated well in advance and bake it only when needed.
- These are best enjoyed hot. Make them just before serving.
- Do not over heat the oven, else gobi will be burnt.
- You can make this gobi in air-fryer too.
- Success of this recipe is in the marination. You can use this same marination for other things like asparagus, paneer, tofu too.
