Schezwan Jackfruit Pulled Pork Recipe
I have always admired jackfruit. Coming from Indian background, I mostly used jackfruit in curry. Recently, my partner was eating a chicken burger with pulled chicken. This prompted the idea in my head that I could try soya as replacement for chicken in my burger. I did not had soya at home that time and I found jackfruit in the pantry. There it was ! The idea to make pulled jackfruit burger. I wondered what sauce to use with it? The choice was not difficult, I love spices and hence schezwan sauce felt great choice. This pulled jackfruit tasted much better than I had even thought. So if you looking for best meat replacement, pulled jackfruit is your friend.

What is Jackfruit
Jackfruit is a fruit from jack tree. It is mostly grown in tropical climate. You can consume it raw (after cooking) as well as when its ripe. Jackfruit is mostly found in southeast asian countries. It has texture of meat and tastes like meat too. Ripe jackfruit has strong smell and tastes sweet.
In this recipe, I have used raw jackfruit in can, but you can use fresh jackfruit and boil it.
Handing raw jackfruit
Cutting raw jackfruit can be a pain. It is not so easy to cut. Use proper knife for it. Raw jackfruit is sticky and it gets difficult to get the stickiness out from hands. Make sure you have a good plain surface where you can keep jackfruit, before cutting. Grease your hands and knife with oil. This way handling of jackfruit becomes easy and jackfruit does not stick to the hands.
Because finding fresh jackfruit in UK is difficult, I have used canned jackfruit. It also saves time and hassle of cutting jackfruit and then boiling it. Having said that, fresh jackfruit tastes best.

Method for making Jackfruit Pulled Pork
- Take a wide mouthed pan, and add oil to it and use medium heat. Add sliced onion in the hot oil and saute till raw smell fades away.

- Add boiled jackfruit (or from the can). Make sure to remove brine from jackfruit before adding.

- Add schezwan sauce, and mash the jackfruit thoroughly.
Adding Schezwan Sauce for Jackfruit Pulled Pork Recipe Mashing Jackfruit
- Cook for about 10 mins, while mashing. Make sure that sauce is thoroughly mixed and jackfruit cooked.
- Serve it as a filling in a burger, wrap, tacos or sandwich, along with your favourite sides.

ProTips
- If using fresh jackfruit, please make sure that the jackfruit is boiled enough by trying to mash with fingers. It should not be over boiled nor boiled less that it feels hard. Discard the seeds for this recipe.
- If using canned jackfruit, drain the brine away.
- You can use alternative sauces, like BBQ if you do not like spices of schezwan sauce.
- I have not added salt in the recipe, but you may, if you find it less salty. Schezwan sauce has salt on its own.
- If using fresh jackfruit, plan ahead for recipe as boiling the jackfruit will take time.

- Discard any seeds from jackfruit for this recipe.
How to make Schezwan Sauce at home
- Take few (20 odd) fresh red chillies in a bowl. Deseed if you do not wish the sauce to be too spicy. Types of chilli also dictate how spicy schezwan sauce is going to be. Add hot water on the chillies and soak for 30 mins at least.
- Take the water out and blend the chillies to smooth paste using a blender.
- Take a pan, add 1 tbsp of oil, add 1tbsp chopped ginger, 2 tbsp chopped garlic and 7-8 sichuan peppers (for nice aroma) and saute for couple of minutes.
- Add freshly chopped onions (3 tbsp) and fry till they turn translucent.
- Add chilli paste, 1tbsp sugar, 1.4 tbsp salt and saute for couple of mins. Now add half cup hot water and mix well. Cook till this becomes thick and oil separates.
- Add 1tbsp of soy sauce and 1 tbsp of vinegar. Mix well. Add more salt or vinegar if required to suite the taste.

- Quick to make, and takes only 20 mins.
- Can be used as filling in wraps, burgers, sandwiches and tacos.
- Can be kept for 2 days when refrigerated.
- Suitable for freezing.
Serving suggestion
Serve this in a burger, or pop it inside a wrap, or stuff in a taco. Simply take a bun, add this pulled jackfruit, add burger sauce or mayonnaise, add cheese (if you wish) and your burger is ready. Serve with fries or veggies.

- 250 Grams Raw Jackfruit / Kathal I have used canned Jackfruit. If using fresh jackfruit, boil the jackfruit.
- 1 Onion Medium size, Chopped
- 4 Tbsp Schezwan Sauce Store bought, or homemade
