Puff patties (पफ पैटी) is a wonderful snack option for the days that you want something substantial and you can’t wait very long for it to be made!! This is one snack which can be consumed during anytime of the day and can be filling too. Hopefully my simple to follow puff patties (or pastry as some may call) recipe will guide you to make it ourself, as per your own taste. The stuffing I have used here is of potato / aloo, so technically these are aloo puff patties.

What is puff patties or puff pastry
Puff patties or sometimes called puff pastry is patties made from patties sheet. This patties sheet is made from all purpose flour and lots of butter. When you bake these patties sheet, it will puff and hence the name puff patties. You can choose the filling for the patties as per your choice. Potato, egg, chicken are most common filling. If you in India, you can find other filling like paneer too.

Where to find puff pastry sheet?
Most of the super stores have puff pastry ready to use sheet available. You can either buy from there or you can even make the sheet at home. Of course making the sheet at home adds to the time of making patties and can be onerous task. I will add the recipe to make the puff pastry sheet here in future.
Method to make puff patties with potato stuffing
- Heat a pan over medium heat and add 1 tablespoon of oil. Add mustard seeds and cumin seeds to in the oil, once seeds crackle add chopped onion and saute till onion turns brown.
- Now add all the spices as listed in ingredients, as well as boiled potatoes (mash them before adding) and mix well.
- Preheat your oven to 180 degrees for 10mins. Take the vegan puff pastry sheet and cut into six equal squares. Now add the potato mix to each square, ensuring its not too much stuffed nor too less stuffed. Idea is that you should be able to fold the sheet and give a shape of parcel. If you add too much filling, while you bake, potato will come out, and you do not want that to happen.
- Place all the patties parcels on the baking tray at 180 degrees for roughly 15mins.
- Now take the tray out from oven and serve hot.
How to make Vegan patties
Puff sheets have butter in it. This is what makes them non-vegan friendly. You can make use of vegan butter as against to normal butter while making puff pastry sheet or make sure you buy vegan patties sheet.
I have used potato (aloo) as the stuffing in my recipe, which is fully vegan.
Are puff patties gluten free?
Sadly, puff patties are not gluten-free. These are made from all purpose flour and hence not gluten free. You can try making the sheet from multi-purpose flour, which will be gluten-free. I have not yet tried that. I will update the details here when I do so.

Puff patties recipe without oven
Making these patties in oven is super easy. I do understand that not everyone has access to oven, hence sharing how to make these patties without oven. You can make the these patties on stove top too.
Put the skillet on medium heat, grease the skillet (butter is ideal). Now place patty on the skillet and to create the heating effect over the patty, cover the patty with a lid. Steam will help cook from sides and top. Flip the patty half way and apply grease on other side, cover with lid. This is how you can create patties on a stove top. I must suggest that the the flakiness that one gets in oven is better than what you will get on stove top.
Pro Tips
- Ensure that the patties are sealed properly before putting them in oven, else the stuffing will come out and destroy the look of patties as well as the stuffing will get roasted too.
- Be careful when eating one fresh out of oven. The crust may seem like its not too hot but stuffing will be piping hot.
- Do not over fill the patties. While baking the sheet expands and over filled patties will open up.
- Serve these hot, else you won’t find the nice crispy flavour. If re-heating, put in a pre-heated oven for 2-3 mins and that will give the crispyness.

- 3 Boiled Potatoes Big size
- 1 Onion Medium size
- 1 Puff Pastry Sheet Choose one which is Vegan (can use non-vegan too if not making Vegan food)
- 1 Teaspoon Salt
- 1/2 Teaspoon Red Chilli Powder
- 1/3 Teaspoon Cumin Seeds
- 1/2 Teaspoon Mustard Seeds
- 1/2 Teaspoon Turmeric Powder

- Oil For brushing
- 1 Tablespoon Oil For making stuffing
Instructions
