There are two types of tom yum soup, one is clear soup and other is frothy, milk based. Over here, I am sharing recipe of clear tom yum soup.

Ingredients
  

  • 1 cup Sliced Mushroom
  • 1 Onion  sliced
  • 3-4 Garlic  chopped
  • 1 tbsp Lemongrass  chopped
  • 1 tbsp Ginger juliennes 
  • 2 Vegetable stock 
  • 3 cup Water 
  • 3-4 Kaffir lime leaves 
  • 2 Thai chilli  chopped
  • 2 tbsp Bok choy  chopped
  • 1/2 cup Tofu pieces 
  • 10-12 Cherry tomatoes 
  • 8-10 Thai Basil leaves
  • 1.5 tsp Soy Sauce 
  • 1/3 tsp Salt 
  • 1 tsp Red chilli sauce 
  • 1.5 tsp Lime juice 
  • 10-15 Coriander leaves 
  • 1 tbsp Oil 

Instructions
 

  • Heat a wide pan over medium heat and add oil to it.
  • Once warm, add chopped garlic, onion, lemongrass and ginger julienne to it and sauté. Add sliced mushroom and sauté again.
  • Add bok choy, tofu and water and mix. Add vegetable stock and mix well. Add cherry tomatoes and chillies and let it cook till it starts boiling.
  • Add basil leaves and kaffir lime leaves. Now add soy sauce, salt, and red chilli sauce and stir it so that everything is mixed. Let it boil for few more minutes. 
  • Squeeze lime juice in it and add coriander leaves. Stir it and let it cook for 2-3 minutes. Switch off the heat.
  • Transfer it into bowls and serve this soup piping hot. Enjoy..

Notes

  1. Galangal is the main ingredient of this recipe.  I couldn’t find it in my local grocery store so I used ginger in my recipe. However if you can source galangal, please use that.
  2. Similarly if you can’t find kaffir lime leaves, you can use either Merkut lime leaves or Simply lime zest( grate the skin of lime).
  3. You can make it more spicy as per your taste buds, just increase the amount of red chilli sauce accordingly.
