Fennel Lamb Shank Recipe

Indulge in a flavourful Instant Pot lamb shank recipe that combines tender meat with aromatic spices and fresh fennel bulbs. Fresh Fennel and why did I use it in this recipe

Fresh fennel is a hidden gem in the vegetable world. With its crisp, slightly sweet flavor and delicate anise-like aroma, it adds a delightful twist to savory dishes. Often overlooked in Indian households, this aromatic bulb deserves the spotlight. It is valued not just for its taste but also for its health benefits. Packed with antioxidants, vitamin C, and fiber, fennel aids digestion and boosts immunity—a perfect addition to wholesome family meals.

Now, here’s where the fun begins. My husband, Kapil, is a lamb fanatic. He loves a rich lamb curry. A simple grilled chop will also do. If there’s lamb on the table, he’s in foodie heaven. So naturally, I’m always on the lookout for ways to surprise him.

One weekend, I had an idea—why not marry the bold flavors of lamb with the freshness of fennel? I knew it was a gamble, considering fennel isn’t your typical masala pantry staple. But hey, marriage is about experimenting, right? (Both with ingredients and life!) After a little Instant Pot magic, the lamb shanks were fall-off-the-bone tender, infused with fennel’s sweet aroma and spices. Kapil’s verdict? “Babe, this is Michelin-star worthy!” (Okay, I might be exaggerating, but the smile said it all.)

If you’re looking to wow your lamb-loving family with something fresh and flavorful, give this recipe a try. Fennel might just become your kitchen’s newest star.

What is lamb shank

Lamb shank is the cut taken from the lower part of a lamb’s leg, just below the knee. Unlike the more glamorous chops or the easily accessible shoulder, the shank is like the underdog of the lamb world. It may not be the prettiest, but trust me, it shines when cooked right. The secret lies in its rich marbling and tough connective tissue, which break down beautifully when slow-cooked, delivering melt-in-your-mouth tenderness.

So why did I choose lamb shank for this dish? Simple: Kapil, my lamb-obsessed husband, deserves a meal that’s as hearty and indulgent as his love for lamb. Plus, I wanted a cut that could soak up all the aromatic spices and still hold its own. Lamb chops would’ve been too delicate, and let’s be honest—shoulder can get bossy, hogging all the attention in a dish. Shank, on the other hand, is humble yet confident, quietly becoming the star after a slow cook session.

The beauty of lamb shank is that it makes you work a little for its love. However, the reward is worth it. Once it’s cooked, you have a tender piece of meat. It is juicy and infused with the magic of spices and fennel. If you’ve never tried cooking this cut, this recipe will make you appreciate its flavour.

Ingredients for this fennel lamb shank recipe

Below is the breakdown of ingredients I used, and I have tried to put reasoning behind each ingredient

  • Lamb Shanks: Perfect for slow cooking, becoming juicy and tender as they absorb all the flavors.
  • Fennel Bulbs: Add a subtle sweetness and refreshing aroma, balancing the richness of the lamb.
  • Onion Paste: Forms a creamy base and deepens the flavor of the curry.
  • Ginger Garlic Paste: Essential for that bold, aromatic Indian flavor and aids in tenderizing the meat.
  • Garlic Cloves: Boost the savory, earthy notes, making the dish irresistible.
  • Chopped Tomatoes: Bring acidity to cut through the richness and create a thick, flavorful gravy.
  • Bay Leaves: Infuse a warm, woody aroma that elevates the spices.
  • Turmeric Powder: Adds color and earthy warmth while being great for health.
  • Red Chilli Powder: Provides a kick and vibrant color—just enough to tingle your taste buds.
  • Garam Masala: The final touch of robust warmth that ties all spices together.
  • Coriander Powder: Adds a mild citrusy, earthy flavour for balance
  • Cumin Powder: Brings smoky undertones that deepen the overall taste.
  • Salt: Enhances every flavour and brings the dish to life.
  • Chopped Coriander Leaves: A fresh, herbaceous garnish that adds color and brightness.
  • Oil: Helps sauté the ingredients, blending spices, and creating the base for a rich, flavourful lamb shank curry.

Method to make this fennel lamb shank

Sauté to Start

Set your Instant Pot to sauté mode and heat the oil. Once it shimmers, toss in bay leaves and onion paste. Sauté until golden—this is where the aroma starts making your home smell like weekends back in Mum’s kitchen.

Aromatics Are Magic

Add ginger-garlic paste and stir like you mean it. Drop in garlic cloves, then sprinkle turmeric, red chilli, garam masala, coriander, and cumin powders. Let the spices mingle—it’s the soul of the dish.

Tomato Time

Chopped tomatoes go in next. Sauté until they break down and the oil starts separating. If your neighbors aren’t sniffing around by now, you’re doing it wrong.

Shanks & Fennel Reunion

Add lamb shanks and fennel bulbs. Coat them generously in the spice mixture—this is where bold Indian flavors meet refined European elegance.

Serving suggestions

This lamb shank curry is a showstopper, so pair it wisely! Serve it over a bed of steamed basmati rice to soak up that rich, spiced gravy. Naan or laccha paratha is a fantastic choice. If you want to scoop up every drop, trust me, there will be no leftovers when you go this route.

Feeling indulgent? Add a side of creamy cucumber raita to cool things down and balance the bold flavors. Don’t forget a simple salad with onions, cucumbers, and a squeeze of lemon for that tangy crunch.

If you’re hosting, throw in some crispy papad on the side. And if you’re dining solo, just grab a spoon and dig straight in—you deserve it! Whatever the pairing, be ready for compliments and requests for second helpings.

Instant Pot or not?

The Instant Pot is a game-changer for this lamb shank recipe. Its pressure and slow-cook functions work wonders by tenderizing the meat while infusing it with all the aromatic spices. What would typically take hours on the stovetop or in the oven is ready with less effort and fuss. Plus, it locks in flavors beautifully, making the lamb juicy and mouthwatering. And let’s not forget the convenience—set it, forget it, and come back to a perfectly cooked meal!

No Instant Pot? No problem! A slow cooker is an excellent option; simply cook on low for 6-7 hours or high for 3-4 hours. If you’re a traditionalist, use a heavy-bottomed pan or a Dutch oven on the stovetop. Cook the lamb on low heat for 2.5-3 hours, stirring occasionally to avoid sticking. Whichever method you choose, be ready for a flavourful feast!

Pro Tips for best lamb shanks

1. Go Slow with the Shanks: Lamb shanks need time to shine. Whether you’re using an Instant Pot or slow cooker, patience is key. Think of it as letting a good curry simmer—the longer, the better!

2. Spices Are Your Friends: Indian spices are the heart of this dish, but don’t overdo them. A little goes a long way, and balance is everything. Think of it like your favourite Bollywood plot—too much drama can ruin the story!

3. Fennel for the Win: Fennel might be the underdog in your spice cupboard. It brings a unique sweetness. This flavor marries beautifully with lamb. Don’t skip it—your taste buds will thank you, and you might just impress your British mates!

4. Resting Is Key: After cooking, let the lamb rest for a few minutes before serving. Trust me, it makes a huge difference! Just like a good cup of tea, sometimes things need a little time to settle.

Absolutely! You can use a slow cooker or a stovetop Dutch oven. It’ll take a bit longer, but the result will still be delicious. Just remember, slow and steady wins the flavor race!

4. What can I serve this lamb shank curry with?

It pairs wonderfully with basmati rice, naan, or even laccha paratha. For a real treat, throw in a side of raita and crispy papad!

5. How long will leftovers last?

If you have any leftovers (lucky you!), they’ll last 3-4 days in the fridge. Just reheat, and you’ll feel like it’s day one again!
