Easy nacho cheese recipe – Tell me who does not know Nachos? With globalisation, food has travelled beyond borders. As most of my regular followers will know, I love Indian food. Having said that, Mexican food ranks pretty high in my tastebuds chart. Talking of Mexican food, Nachos would get special mention. I am a frequent nachos eater. Long ago, nachos was restricted to special treats. Ever since I learnt how to make loaded nachos at home, I make nachos at home almost once a week at the least. Sharing here my simple, quick and easy nachos recipe.

What is Nachos
Nachos is Mexican food. Tortilla chips are heated and cheese is topped on it (normally cheese melts), along with other things like Jalapeños. According to wiki, the history of Nachos is linked to Piedras Negras. Ignacio “Nacho” Anaya was the creator of nachos. When Mamie Finan, a regular customer, asked if Anaya could bring something unusual and new, Anaya made this nachos, back in 1940. Anaya cut the tortillas in triangular shape. Fried these tortillas and added melted cheese along with jalapeños, gave this the name as “Nachos”.
Ever since Nachos has travelled world and is one of the most sought snack.

Nachos is such an easy thing to make, that it takes only a few minutes and a great munch is ready. One can choose toppings on nachos as per taste. My daughter will go with simple basic nachos with less spicy dips. I like fully loaded nachos with lots of cheese, jalapeños, chickpeas, olives etc.
Method
My recipe is how I normally make nachos (and loved by my guests). Please feel free to change toppings as per own taste.
- Place the nachos in a tray and spread chopped onion and chickpeas all over it. Spread cheese over them and microwave on high heat for 1 minute.
- Now evenly spread jalapeños, tomato salsa, guacamole, sour cream and burger sauce.
Common nachos toppings include:
Black beans, chilli con carne, chives, cilantro, ground beef, meat, guacamole, jalapeño, lettuce, onion, garlic, sour cream, pickles, tomatoes, salsa, lime pickles, chickpeas, etc.
My recipe is for vegetarians, however non-veg lovers can add beef or other meat as per taste.

Pro Tips:
- Make sure that all the ingredients are ready to hand before putting nachos in oven.
- Do not over heat in oven, else nachos will get burnt.
- Whilst the choice of toppings is unlimited, choose the toppings which goes well together. Also, do not go overboard with toppings.
- Serve them instantly from the oven, else nachos will go soggy.
- Use fresh veggies as much as possible for better taste.

Serving Suggestion
Serve these loaded nachos hot on its own or a drink of your choice, like blue lagoon mocktail.

Fully Loaded Nachos
Ingredients
- 150 Grams Nachos
- 1 Onion Small Size, Finely Chopped
- 6 Tbsp White Chickpeas Boiled
- 50 Grams Grated Mozzarella Cheese
- 1/2 Cup Tomato Salsa
- 6 Tbsp Guacamole
- 4 Tbsp Sour Cream
- 3 Tbsp Burger Sauce
- 4 Tbsp Jalapeños

Notes
- I have used a Doritos (nachos) packet here, but you can use any nachos of your choice.
- You can add boiled/canned sweetcorn and finely chopped bell peppers too. (This is optional)
- You can skip adding burger sauce. I like adding it as it gives little tangy and creamy flavour.
- Always make them just before eating. As leaving them for longer will make them soggy.
- To make it more spicy, sprinkle little chat masala on top.
