Badam Milk Recipe – Almond milk (Badam ka doodh) or Badam kesar milk is a nutritious and wholesome Indian drink made from mainly almonds and milk. This badam milk can be fed to any age group whether it’s 1 year or 101 year. Almonds are a good source of protein and vitamins which helps in brain development.
What is badam milk
Badam = Almonds, so when almond paste is added in milk and cooked to thicken the milk a little bit, it is called badam milk. Safforn and Pistachios are added for flavour. It is also referred as “Badam Kesar Milk”, as it has saffron aka kesar added.
Almonds has heaps of benefits. Almonds are higher in fibre, vitamin E, riboflavin, calcium and niacin compared to any other nut.
There has been references that badam milk was used traditionally in India in old ages too. Drink a glass of badam milk in morning and you will have all the energy to last the day long. During summer you can have it chilled and in winters you can sip it hot.
I am less fan of badam milk. However, I remember my mom used to feed me a glass of almond milk when I was growing up. Thanks to the nutritional value it added for good grown of brain and body.
Method
The making of badam milk involves soaking almonds. I will recommend that you soak the almonds ahead of time. Once you have soaked almonds, it is super quick to make badam milk. Below is the step by step Badam milk recipe.
- Take milk in a heavy bottom pan and keep it on medium to high flame. After first boil, simmer the flame and let it cook for 15 minutes.
- Peel the soaked almond and take out 5 almonds from them and grind the rest almonds in to a thick fine paste. Chop remaining 5 almonds, which can be used for garnishing in the end.
- Take Pistachios, 5 almonds, cardamom, mace powder and 2-3 strands of saffron in a mixie jar and grind them to fine powder.
- Now add almond paste and saffron strands to the milk and let it cook.
- Add 2 tablespoon of that powdered nuts and cook the milk for 10 more minutes. Badam milk is ready.

Pro tips for best badam milk
- Soak almonds for at least 2 hours. Almonds should be soft to get a smooth paste. People normally don’t like bits coming in mouth when drinking.
- Use a wide mouth pan for boiling milk.
- Adding saffron and pistachio can be optional. But these two adds to the flavours.
- Give the milk a good stir before serving.

Alternatives
- You can use almond flour in stead of fresh almonds. However, the taste of fresh almonds is best.

Serving suggestion for badam milk
Serve badam milk hot, during cold days. Serve badam milk cold/ chilled, during summer.

Ingredients
- 1 Cup Almonds
- 1 litre Full Fat Milk
- 5 Pistachios
- 2 Green Cardamom
- Saffron Few Strands
- 2 Tablespoon Sugar As per taste
- 3 Grams Mace Powder
Instructions
- Soak almonds in warm water for 1-2 hour so that they are soft and can be peeled easily.
- Take milk in a heavy bottom pan and keep it on medium to high flame. After first boil, simmer the flame and let it cook for 15 minutes.

- Serve it hot or cold depending upon your choice. Whilst serving garnish milk with soaked chopped almonds and dry nuts powder.
Notes
- Grind smooth both soaked almonds and dry nuts as it can change the texture if not grounded properly.
- Use sugar as per taste.
