This means ” Oh GOD with curved trunk, large body whose aura is like light of crores of sun, Please make my entire work obstacle free, forever….In Hindu culture, we always commence every Auspicious work with the name of Lord Ganesha, whether it’s wedding, child birth function, invitations, start of business, or any holy celebration. Lord Ganesha is “Vighnaharta” or destroyer of all the obstacles.
Being my first detailed post, I want to dedicate this to “Lord Ganesha”…and here by presenting his favourite “Besan ke Laddoo“
For “Besan ke laddoo” all you need is:
- 2.5 cup of Gram flour/Besan – 500 grams
- 1 cup of clarified butter/Desi ghee – 350 grams
- 2.5 cup of caster Sugar/Boora – 500 grams
- Green Cardamon – 8-10 in number
- Turmeric Powder – 1 teaspoon(optional)
- Cashews – 15-20
- Almonds – 10
➢ First of all, sieve the gram flour so that it is lump free.
➢ Chop half Cashews and all the almonds or you can coarsely ground them in grinder. Ground Cardamom seed as well to make powder of it.
➢ Now take a heavy bottom Pan or Kadhai and put it on a medium flame gas burner. We will cook on medium flame burner all the time as it will help in slow roasting of gram flour/Besan which will result in very good flavour for laddoo.
➢ Now add Ghee to the Kadhai/Big deep pan and wait till it gets little warm.
➢ Add turmeric powder to the warm ghee now if you want to add it. Turmeric powder helps in giving a rich yellow colour to the laddoos.
➢ Now add gram flour/Besan to the Kadhai slowly with the help of a steel or wooden spatula. Slowly roast this on the medium flame. Keep stirring and feel the aroma. Once you get the roasted aroma of gram flour, check it with spreading one tablespoon of water on it. If water evaporates immediately leaving yellow bubbles on top, it means your Besan is fully roasted . This water test also helps in forming good size granules of Besan for laddoo. Switch off the flame and keep stirring for few more minutes as heavy bottom pan takes time to cool down and we don’t want our Besan to get burnt smell. The whole process of roasting takes about 10-12 minutes.
➢ Allow this to cool to that level where u can easily hold this roasted Besan in your hand. It should be just lukewarm.
➢ Add Caster Sugar, cardamom seeds powder and chopped/grounded nuts now.
➢ Now mix this mixture with your Hand thoroughly and start making round balls of it by taking one tablespoon of this mixture and shaping that in between both of your palms.
Garnish these with rest of the cashews.
Your yummy “Besan ke laddoo” are ready to be served.
Tip: If you roast the nuts before chopping/grounding them, your laddoo would be more tastier.
