First of all, pressure-cook the bananas for 10 minutes or 2 whistles of cooker with their peel on. Switch off the heat and let pressure release on its own.
Once cooled, peel the skin and in a mixing bowl, mash the banana with a fork or masher.
Add mashed boiled potatoes, green chillies and all the spices to it and mix well to form a soft dough.
Grease your hands with oil and shape cutlets out of the dough. You can give them any shape.
Heat oil and fry them on low flame, turning occasionally until they are golden colour on both sides.
Take them out on a kitchen towel and serve them hot with mint-coriander chutney.
Notes
Don’t overcook the bananas as we want them to be soft and tender not mushy.
You can shallow fry them too instead of deep frying (relatively healthy option, or best if you use Air fryer )
You can make them for fasting as well. Just skip adding cornflour and spices. Add fasting flour like tapioca/buckwheat/chestnut etc and fasting spices like rock salt and black pepper powder instead.
You can skip pressure cooking bananas too. Try adding grated raw bananas. The cutlets taste good this way too.
