First of all chop onions, green chilli and tomatoes. Also chop spring onions.
Break the eggs in a wide mouth bowl, add milk and whisk the eggs thoroughly.
Take a wide mouth pan or wok, add oil, then add chopped onions and sauté till onions are translucent. Add ginger garlic paste and chopped spring onions. Fry till raw smell fades off from garlic.
Add red chilli powder, turmeric powder and garam masala.
Add chopped tomatoes and green chilli, and fry till tomatoes are mushy.
Now add whisked eggs, and salt. Constantly stir to form scrambled shape. Make sure heat is on low. Move the spatula on sides to ensure egg does not stick to pan.
Keep gradually stirring the egg, and you will see the lump formation. Switch off the heat and serve these scrambled eggs with any bread of your choice.
Notes
You can add other veggies in this bhurji, such as mushrooms, beans, green peas etc.
Make sure that the heat is low, else egg will get burnt and may stick to the pan.
Constantly stir after eggs have been added, else you end up with Omelette kind of thing.
If you do not have garam masala, you can use other masala like, kitchen king, or pav bhaji.
Whisk the eggs well before adding in the pan, this will give fluffy egg bhurji.
