Wash and boil Arbi in pressure cooker for 2-3 whistles so that they are soft and cooked. Peel off the skin and slice them in rounds.
Heat oil in a pan and add carom seeds, asafoetida, and chopped onion. Once onion are translucent add grated ginger and chopped green chillies and sauté for a minute.
Add all the spices except salt and black salt, sauté again for a minute. Add yogurt and stir continuously till it comes to boil.
Add 1/4 cup water and boiled Arbi pieces and mix well. Let it cook on medium heat for 5 minutes. Add lemon juice and switch off the heat. Garnish with fresh Coriander leaves and Serve hot.
Enjoy with bread of your choice.
Notes
Boiling time of Arbi May vary as it depend upon the quality of Arbi.
Always add salt after the yogurt mix comes to boil otherwise it may curdle.
