Pink Velvet Cake with Raspberry Cream Cheese Frosting

Ingredients

For the Cake

You will need:

  • raspberry cream cheese frosting;
  • edible flowers;
  • meringue kisses;
  • 3 tbsp. seedless raspberry preserves;
  • 3 drops pink food coloring;
  • 3/4 c. buttermilk;
  • 2 tsp. pure vanilla extract;
  • 4 large eggs;
  • 4 cup. fresh raspberries;
  • 2 cup. granulated sugar;
  • 1 cup unsalted butter at room temperature;
  • 1/2 tsp. Kosher salt;
  • 1 tbsp. baking powder;
  • 3 cup cake flour;
  • cooking spray.

For the Raspberry Cream Cheese Frosting


You will need:

  • 3 cup confectioners’ sugar;
  • 1/2 tsp. Kosher salt;
  • 1 tsp. pure vanilla extract;
  • 1/4 cup fresh raspberries;
  • 4 oz. cream cheese at room temperature;
  • 1/2 cup unsalted butter at room temperature.

Method for making pink velvet cake

Before anything, you have to preheat the oven. Then, take care of mixing the ingredients you need. The oven should be preheated at 350 degrees Fahrenheit. Grab three cake pans and grease and flour them with butter and 8 inches of flour. In a separate bowl, whisk baking powder, salt, and flour. Next, use your electric mixer at medium speed to beat sugar and butter. You should obtain a light and creamy composition after you mix it for about 1 to 2 minutes.

Now it is the right moment for you to add the raspberries. Mix them with the rest of the composition for 20 seconds, until you obtain a smooth cream. When you add the eggs, make sure you put them one at the time, mixing them with the rest of the composition. You must beat them until they blend after each addition.


Add the vanilla extract and mix it together only after you reduce the mixer speed. Next, you have to add the buttermilk and flour mixture alternately. Make sure you begin with the flour mixture and end with it until it gets incorporated into the whole composition. If you want, you can add pink food coloring to make it sparkle with pink. Now that the whole batter is ready, you can equally divide it in the three pans you have prepared.

Baking the cake

Bake the cakes for about 25 minutes. Test whether the cake is baked by sticking a wooden pick into the center and you get it out clean. After the cake is ready, consider cooling it on wire racks for 10 minutes.

Take a bowl and mix together the remaining 3 cups of raspberries and the preserves. On a plate, place a cake layer and add 1/2 of the preserve mixture. Do the same for the next layer of cake you add. Then, add the third cake layer on top. Now it is time for you to make the frosting. Start by mixing with an electric mixer the cream cheese and butter on medium speed until the composition gets creamy, for about 1 to 2 minutes.

Next, add salt, vanilla and the rest of the raspberries and mix them for 15 to 20 seconds until the fruits break down. Make sure you reduce the speed of the mixer before you add confectioner’s sugar. You should mix it really well after every addition, for about 45 to 1 minute. Now that your frosting is ready, you can spread it on top and on the sides of the cake. Feel free to decorate the cake with raspberries, edible flowers, and meringue kisses.
