Christmas is round the corner. Where did whole year go? At the beginning of the year I had thought of making a chocolate fudge. However I never got around to write the recipe but before the year ends here is me sharing my easy to make and white chocolate and cranberry fudge.
So why chocolate fudge? It is easy to answer, invariably majority of kids (and adults too) love chocolates, and this only means anyone who eats this fudge has a happy face, and who does not like seeing happy faces around?

When I made this white chocolate fudge this time around, it was all gone, thanks to guests who frequent me and I love feeding my guests. However getting next batch of these fudge was least of a concern as it barely takes 15 mins.
Now if we talk about the ingredients of the recipe, it needs few ingredients which you can find anywhere easily. Ingredients of this fudge are, white chocolate, desiccated coconut, cranberries, pistachio, cashew nuts, almond flour and raisins. You may leave out few nuts if you do not wish.
I have used Pistachio and Cranberry here because of the distinct taste they offer. Whilst the quantity suggested in the recipe is for the taste I like. You may change it minutely to suit your specific taste.
Method
- First thing we need to do is melt chocolate, for this chop the chocolate into small pieces and keep them in a glass bowl. Now keep this bowl into a big Kadhai /pan with boiling water. Stir it continuously with the help of a spatula as the chocolate start to melt.
- Take the bowl out once the chocolate is melted evenly. Now mix cashews, raisins, esiccated coconut, ground almond, 2 tablespoon of pistachios and 4 tablespoon cranberries. Mix them together properly.
- Grease a tray with butter/oil and transfer this mixture on it and spread evenly. Spread rest of chopped pistachios and cranberries and tap with the spatula so that they stick on top of it.
- Let it cool down for some time and then cut them into pieces.
