Pizza and Pasta are ruling the world and will be surprised if someone says they have not heard about it. However, there is more to Italian cuisine, there is this Risotto, which is relatively less known and the word “risotto” is taken from the term “riso”meaning rice, this rice based dish originates from north of Italy (src: Wiki). Much like lots of other rice dishes like biryani, you can have veg or non-veg variants.

It is quick to make, contains goodness of Asparagus and Salmon (packed with Protein!) and still super scrumptious.

About 2 years ago I posted recipe for bruschetta con funghi, one of pizza express delicacies. Inspired by same, I had tried bruschetta bread with toppings of mushroom and cheese, and I made this again one of those “ready in minutes” starter. This “cheesy mushroom bruschetta” is really simple to make and you can certainly earn brownie points from your guests, as it tastes simply superb! Thanks to the crunchy crust and cheesy topping, it tastes like mine pizza.
