Lauki Ki Kheer Recipe (Step by Step)

“Lauki ki Kheer” (लौकी की खीर), also known as Bottle Gourd Pudding, Bottle Gourd Pasayam, Doodhi Kheer is a healthy, easy to digest and very refreshing dessert made with bottle gourd. This kheer is mainly made in my house during auspicious Navratri days, when we keep fast and can’t consume the regular rice kheer. It is surprisingly very easy and quick to make. Who says Navratri food needs to be boring? My platter is always full of such tasty food even during Navratri. This kheer recipe is a testament of many such tasty Navratri recipes.

Whilst Lauki / Bottle Gourd Kofta curry is my favourite, but this dessert (Kheer) also leads in the things my guests love.

Paneer Potato cutlets or tikki is a well known Indian starter, and is something which is easy to make, delicious and mass pleaser. Normally, it popular in north of India, however owing to its popularity, its finding its place in people’s heart across India and rest of the world. A massive majority of people love paneer. Usually paneer cutlets are made primarily with paneer only. However, here I have infused potatoes to add carbs along with paneer (protein). My recipe here is with the focus of people who observe fast (Hindu fast, such as during Navratri, Shivratri, etc). I will also explain, how you can make it so that it is not only specific to fasting days.

Kuttu (Buckwheat flour) poori recipe | vrat ki poori recipe

Kuttu ke Puri (कूटु के आटे की पूरी) is something which is most commonly consumed during the days of religious fasting e.g. Navratri, Shivratri, Ekadashi. This buckwheat flour poori (puffed bread) is not much different from normal puri, except that here I add grated boiled potato in the dough for that added flavour. There are few other flours like Amaranth (Rajgira) flour and Water chestnut (singhara) flour, which can be used to make fasting (vrat) food. Kuttu Ka Dosa

Who says that vrat ka khana (Fasting food) is either boring or laden with Oil. “Kuttu ka dosa” or “Falahari Dosa” or “Vrat ka dosa” is a great option for those who want to avoid eating Kuttu in fried pooris (puffed indian bread) or pakoris.

These Buckwheat Crepes / Pancakes are instant and gluten-free. As the recipe doesn’t require any soaking and grinding, they require very less time and effort, and all this comes with no compromise on tastes. This recipe produces a crisp buckwheat dosa, and the filling is made of potatoes. It is a good source of protein, iron, zinc.
