Broccoli paratha recipe – Broccoli, what image comes to your head? A green looking cauliflower? Being Indian origin, paratha is a regular feature in my kitchen. However, I do acknowledge parathas are not the most healthiest option out there. Hence, I try to find ways to make meal healthier yet not compromising the taste. Broccoli paratha is one such thing which I make now and then. One of my ways to feed greens.

What is Broccoli Paratha?

Paratha is shallow fried Indian flat bread. A paratha made with the stuffing of broccoli is broccoli paratha.

Broccoli is green plant from the family of cabbage. It can be eaten raw or cooked. Broccoli is rich in Vitamin – C and Vitamin – K and comes with numerous health benefits. It is great source of natural protein along with fibre and potassium. This also contains anti-oxidants. You can’t really go wrong with introducing broccoli in your meal.


I was not too much familiar to broccoli when I was growing up in 90s. However, now broccoli is a regular feature in my kitchen. I use it in salads, pasta, stir-fry, curry and this paratha too.

Method of making Broccoli Paratha

  • Wash and pat dry the broccoli. Now grate the broccoli in a food processor or with the help of grater.
  • Take a mixing bowl and add flour and a pinch of salt to it. Knead it into a soft dough with the help of water and keep aside.
  • In an another bowl, add all the spices, grated broccoli and chopped onion and mix it well. Our stuffing for broccoli paratha is ready now.
  • Divide the dough into 6 equal parts and make round balls of it.
  • Spread some dry flour on the surface where you planning to roll the parathas, and place a dough ball on it.
  • With the help of a rolling pin, roll the dough into a small circle. Now put some stuffing on it and gather all the edges to make it round once again.
  • Again apply some flour to it and press it into a small circle with help of your fingers. This step helps in evenly spreading of stuffing. Now with the help of rolling pin, roll it into a circle of 5-6 inch diameter.
  • Place a tava / non-stick pan over medium heat, and place the rolled paratha on it. Flip it over after 1 minute and then apply Oil on the top side.
  • Flip it again and apply Oil this side too and let it cook properly on both sides till brown blisters appears, flipping it few times.
  • Transfer cooked paratha to a plate, and make rest of the parathas by repeating the above steps.

Pro Tips

  • Make sure that the stuffing is not too much, else broccoli will pop out of paratha whilst frying.
  • In case broccoli feels wet, ensure that you have squeezed out water from grated broccoli.
  • Always knead dough little more soft compared to the chapati dough. As the stuffing doesn’t come out if dough is more softer.
  • Always make the stuffing at the last moment as if kept for long after making, it leaves water and stuffing gets little watery.

Serving Suggestion

Serve these broccoli paratha hot with pickle, chutney or yogurt. These parathas will get soggy if not served fresh, please do exercise care.

Ingredients
  

  • 2 Cups Wheat flour (Aata)
  • 1.5 Cups Broccoli Finely Grated
  • 1 Onion Finely Chopped
  • 1/2 Tsp Cumin Powder
  • 1 Tsp Coriander Powder
  • 1/3 Tsp Red Chilli Powder
  • 1/2 Tsp Salt As per taste
  • 3 Tbsp Oil
