Gobi is one of the most common vegetable found anywhere in the world. I normally used to make aloo-gobi sabzi. The days when I want to pamper myself, I will lean on to make gobi manchurian. The other day, I made tandoori chicken for my family and since I do not eat non-veg food, I thought what shall I make for myself? This made me make this tandoori gobi.

In an ideal world, this gobi needs to be made in a tandoor. Having said that it is not possible for a normal household to have tandoor at home. In this recipe, I have used oven.

Method

  • Mix all the ingredients, namely, yogurt, ginger garlic paste, red chilli powder, salt, turmeric powder, coriander powder, cumin powder, chaat masala, fried onion and lemon juice, except oil, together in a bowl and make a paste of it.
  • Now add 1 tablespoon oil and mix well.
  • Add the cauliflower florets in it the marination. Mix the florets so that they are well coated in the marination. Cover the bowl and let them marinate for 30 minutes.
  • Pre heat the oven for 5-7 minutes on 180 degree temperature. Place the florets one by one on a baking tray. Spread the rest 1 tablespoon oil over them and keep the tray in oven for 20 minutes.
  • Take the baked cauliflower florets out and serve hot.

  • You can plan ahead and get this marinated well in advance and bake it only when needed.
  • These are best enjoyed hot. Make them just before serving.
  • Do not over heat the oven, else gobi will be burnt.
  • You can make this gobi in air-fryer too.
  • Success of this recipe is in the marination. You can use this same marination for other things like asparagus, paneer, tofu too.
