Egg Bhurji Recipe – Anda Bhurji Recipe

Egg Bhurji Recipe – The classic scrambled egg made with Indian spices. Egg lover? How do you love your eggs? Poached? Omelette? Boiled? Egg Curry? Half Fry or Scrambled? My diet was full vegetarian and then in 2012, I became eggetarian. There is a story on how and why I started eating eggs, maybe I will tell it in some other blog post. The bottom line is that now I have came a long way from not touching eggs, to loving eggs and having eggs in diet almost every second day. Egg bhurji is one of my favourite way to consume eggs (Egg curry remains at the top).

What is Egg Bhurji

Egg aka Anda (in Hindi) and Bhurji = scramble in hindi. Eggs are scrambled with Indian spices and vegetables to give great taste and this is called egg bhurji or anda bhurji. French invented scrambled eggs, and egg bhurji was adapted for Indian taste by Indians.

Eggs are great source of nutrition and probably one the cheapest source of protein. Normally I do most of cooking at home, and Kapil does cooking when its something involving non-vegetarian food. However, last weekend, I ask Kapil to make egg bhurji for brunch for the family. He asked me how should he make egg bhurji, and I said, follow my recipe. He said, I have not published it yet. Then I realised that how come I have not shared this simple recipe of egg bhurji on the blog. So here I am now sharing recipe of this anda bhurji, which gets featured in my kitchen very often.

Egg bhurji is very close to Parsi Akuri recipe. You will find my recipe is more close to Akuri. The difference between Akuri and egg bhurji is that akuri is more spicy creamy. I am huge fan of Parsi food and no wonder it sometimes get reflected in my cooking.

Method of making Egg Bhurji (Anda Bhurji)

  • First of all chop onions, green chilli and tomatoes. Also chop spring onions.
  • Break the eggs in a wide mouth bowl, add milk and whisk the eggs thoroughly.
  • Take a wide mouth pan or wok, add oil, then add chopped onions and sauté till onions are translucent. Add ginger garlic paste and chopped spring onions. Fry till raw smell fades off from garlic.
  • Add red chilli powder, turmeric powder and garam masala. Add chopped tomatoes and green chilli, and fry till tomatoes are mushy.
  • Now add whisked eggs, and salt. Constantly stir to form scrambled shape. Make sure heat is on low. Move the spatula on sides to ensure egg does not stick to pan.
  • Keep gradually stirring the egg, and you will see the lump formation. Switch off the heat and serve these scrambled eggs with any bread of your choice.

Eggs are massive source of nutrition with host of vitamins like A, B2, B12 and B5. These contain good cholesterol (If you have high cholesterol, check with your doc how many eggs can you eat). Eggs also contain Choline. Eggs also have Lutein and Zeaxanthin, these are antioxidants and have good impact on eye sight.

Much like any other recipe, this egg bhurji also has few key points to keep in mind to make best egg bhurji.

Pro Tips

  • This recipe talks about using ingredients like spring onion, tomatoes. You can skip these or replace or add other ingredients, like green peas, mushrooms, green beans, bell peppers or even cabbage.
  • To get fluffy egg bhurji, add little bit of milk whilst whisking the eggs. The eggs must be thoroughly beaten, else you will see egg white and yolk separate.
  • This is one pot meal.
  • Keep the heat to low when adding eggs and constantly keep tossing the bhurji to avoid eggs getting over cooked.
  • Use a wide mouth pan. Wide mouth pan will help in cooking the egg uniformly. This avoids eggs getting under or over cooked.
  • Make sure tomatoes are mushy before adding eggs.
  • Dry off moisture/ water, before turning off heat.
  • Get this egg bhurji ready just before serving for best taste. Re-heating does not retain same taste and nutritional value.

Other versions

You may try tofu bhurji for vegans or Paneer bhurji for vegetarians.

Serving Suggestion

Serve this hot egg bhurji with bread. Or serve with Paav (Bun) bread, something you will find common in Mumbai.

If you like eggs you may like to try eggs kejriwal or egg fried rice too. In case you like bhurji.

Ingredients
  

  • 6 Eggs
  • 1 Onion Large, Chopped
  • 2 Tomatoes Large, Chopped
  • 40 Grams Spring Onion Chopped (Optional)
  • 1/4 Tsp Turmeric Powder
  • 20 ml milk Optional
  • 1 tsp Ginger Garlic Paste
  • 1/2 tsp Red Chilli Powder
  • 1/2 tsp Garam Masala Powder
  • 1 tsp Salt As per taste
  • 1 Green Chilli Optional
  • 1 tbsp Oil

Notes

  • You can add other veggies in this bhurji, such as mushrooms, beans, green peas etc.
  • Make sure that the heat is low, else egg will get burnt and may stick to the pan.
  • Constantly stir after eggs have been added, else you end up with Omelette kind of thing.
  • If you do not have garam masala, you can use other masala like, kitchen king, or pav bhaji.
  • Whisk the eggs well before adding in the pan, this will give fluffy egg bhurji.
